雙口呂文化廚房在今年降生於桃園南興,踏入三合院,屬於地方的文化料理教室,於12月與人們正式相見,透過料理連結人與人,創造地方沉浸式體驗的可能性。

「其實,我們從沒想過要做地方創生。」爽朗又帶點靦腆地回應,夫妻兩人相視笑著說道。雙口呂文化廚房是「粿的料理教室」,以料理結合地方文化的教學體驗為主,概念源於外國的「Food Tour」。

周佩儀想起小時候每到逢年過節,外婆會在自家三合院製作粽子、發粿、年糕等傳統米食的場景,而這些米食與傳統信仰和祭祀文化有密不可分的關係,比如春節會做發糕、端午節綁粽子,清明節則會做紅龜粿和草仔粿來拜神明和祖先。於是,兩人決定一邊研究傳統米食、一邊跟外婆學習做粿,成立「雙口呂」文化廚房。

周佩儀是桃園八德的農村小孩,農人敬天畏地有許多祭典,農忙時換工需要各種米食,因此她從小就吃著各種粿點,也有許多和外婆一起下廚的經驗。但外省背景的黃騰威,成長過程中偶爾吃到的粿都是買來的,他為何也要步上粿的傳承之路?

除了婦唱夫隨外,他還有一肚子的不服氣。「我在學習過程中發現『粿』明明就是好東西,其中有很多智慧與文化,一點都不輸西點或和果子。」但為什麼「粿」會變成今日端不上檯面的老東西呢?他自覺有責任要改變這種現況。

在閩客傳統粿點中,曝光機率最高的當屬紅龜粿,從台式聖誕節(如正月初九天公生日、二月初二土地公生日)到廟宇建醮都得用它來拜拜。加上粿面印有龜紋,具有長壽的吉祥意涵,因此度晬(嬰兒周歲)、作壽等人生重要時刻,都少不了紅龜粿的陪伴。傳統會以人工色素染色,但周佩儀改用紅麴粉,不只健康,而且紅麴紅得很收斂,讓紅龜粿的賣相更迷人。
蕃薯是農業時代重要的副食,也是農忙時節用來餵飽換工的點心。…
蕃薯是農業時代重要的副食,也是農忙時節用來餵飽換工的點心。但可不能直接蒸幾個蕃薯搪塞,這可會被嫌為「歹頭家」!最常見的變通方法,就是作成番薯粿。

周佩儀記得阿嬤說過,雨天是最適合作番薯粿的日子。天雨無法下田工作,就在廚房裡把番薯磨成泥,加入澱粉下鍋煎得焦香,就是農工餐間和孩子們放學後的點心。
