We aim to connect diners to the origins of their food while celebrating the hardworking hands that feed us: chefs, farmers, fisherpeople, cheesemakers, vintners, brewers and many more. We’re honored to have welcomed some of the world’s most renowned chefs and culinary artisans to join us and cook in our field kitchen. Our roving restaurant without walls is rebuilt every morning and disappears every night. It is a momentary experience and a joyful celebration of human connection. Everywhere we go we discover innovative, passionate farmers and regional chefs with national reputations using their ingredients in fresh new ways. From the beginning we set out to inspire an appreciate for local farmers.

I'm going to continue traveling and exploring. There are more fields to see and places to visit. I'd like to go to other parts of the world to set up the table and tell the story of food and people, wherever that story might be. I'm going to keep moving. I'm always looking for a perfect place where I can tell the story of food and farms and also a place to do my art. Ideally near the sea with a large canvas for me to draw on.
